In Kagawa Prefecture, Sanuki Udon reigns supreme โ€” it's a tradition passed down through generations, reflecting Kagawa's proud status as the "Udon Prefecture". These thick, chewy noodles are perfect when paired with a fragrant light dashi broth or dipped in rich soy sauce.

Udon shops are scattered throughout the prefecture, but for a truly memorable experience, you can even try your hand at creating your own Sanuki Udon!

Imagine noodles as wide as ribbons! Himokawa Udon is an eye-catching specialty from Gunma Prefecture with a silky texture that glides effortlessly across your taste buds. The wide yet delicate structure of Himokawa Udon allows it to absorb flavors beautifully, served cold with dipping sauce or in a hot broth.

Restaurants providing Himokawa Udon can be found around Kiryu City, just an hourโ€™s drive from Mount Akagi, famous for its scenic hiking trails and breathtaking natural beauty.

Yamaguchi Prefecture

Matcha-Infused Noodles Served on a Roof Tile

This isn't your typical noodle dish! Kawara Soba features green tea noodles served on a piping-hot Japanese roof tile. The heat lightly scorches the noodles, adding a crispy texture while keeping the rest tender. Topped with beef, lemon, and grated daikon, this is a meal for your taste buds and your Instagram.

The tradition of serving soba on a roof tile traces back to Shimonoseki City, where soldiers once used tiles to cook their meals. After enjoying the

culinary experience, take a stroll through Shimonoseki City for stunning coastal views and visit the famous Tsunoshima Bridge
