Visit Kinosaki – Matsuba Crab

Kinosaki Matsuba crab (snow crab) is a large blue-legged crab only caught between November and March, making it a winter delicacy. The sweetness and versatility of the snow crab is unlike those caught in any other part of the world. Part of what makes it so good is that it is caught fresh in the Japan sea, just 10 minutes from Kinosaki Onsen. One of the coolest sights during the season is the morning Matsuba auction, which you can watch from
Tsukiyama Fishing Port. After this, order your own at Okesho Fish Market, the best in Kinosaki!

Kochi Prefecture – Harvest Yuzu
|
|
|
The season for harvesting Yuzu has come! You can find these yellow citruses grow on the groves spreading over many mountain slopes. Since Kochi is the biggest producer of yuzu in Japan, it's no surprise that it’s an important ingredient in local cuisine. You can find lots of yuzu related products, from juice to condiments!
Try local favorite is inaka-sushi, a vegetarian version of Japan’s most iconic dish made with rice flavored with yuzu juice and covered with preserved mountain vegetables, mushrooms or sweet fried tofu. Contact: Kochi Escapes/Tosagokoro kochi@tosagokoro.jp

Cold weather leads the people of Kyoto to one conclusion, perfected by time - the traditional hot pot (nabe or onabe in Japanese). This simple dish has many variations, but the base is fairly consistent; hot broth! The most recommended hot pot restaurant in Kyoto is a fancy one, but well worth the money and wait. Toriyasa offers a chicken hot pot with a very thick chicken broth, and the taste is just full of umami (a savory taste). This hot pot is called mizutaki, and is served with shiitake mushrooms, tofu, and other local ingredients. A must eat!

Explore Shizuoka – Sakura Ebi
|
|
|
One of the best hidden treasures of Shizuoka is the Sakura Shrimp, also known as Sakura ebi. There are only 120 fishing vessels with permits to
fish for them, and there are only 2 fishing seasons; mid-March - early June, and late October - late December. They can be enjoyed “Kakiage (Mixed
Tempura)” or boiled. However, since they are so fresh in Shizuoka, you can eat them raw! We recommend eating at the fishing port. There is a
restaurant right on the harbor, “HAMA no Kakiage-ya”, and the number one dish is “Kakiage-don." We hope you enjoy it!
